Will anything on my desk be moved?

No. Surfaces are cleaned around paperwork, files, and equipment. Papers are not moved, stacked, or sorted, and that rule is stated in the written scope. A clean desk policy on your side removes the remaining risk entirely.

How do you handle server rooms and confidential areas?

Secure and restricted areas are either excluded from the scope or serviced under escort, depending on your policy. Confidential waste bins are left for your own shredding vendor rather than treated as general trash.
